As the weather gets colder in Baku, it’s the perfect time to discover Khash (Xash), one of Azerbaijan’s most famous traditional winter dishes.
Slow-cooked for around 9 hours, Khash is a rich, high-calorie dish traditionally prepared from beef trotters. It contains collagen and protein, which are important components of a balanced diet and help support normal bone and joint health. However, Khash is not a proven treatment for fractures or bone problems.
Traditionally eaten early in the morning, Khash is served with dried bread, garlic, vinegar and pickles. For Azerbaijanis, it is more than a meal – it is a winter tradition.
